Bang Bang Chicken Bowl

1 lb boneless, skinless chicken thighs

1 cup cornstarch

2 tsp garlic powder

1 tsp paprika

Salt and pepper, to taste

½ cup mayo

¼ cup sweet chili sauce

2 tbsp sriracha (adjust to spice preference)

4 cups cooked jasmine rice

1 cup shredded carrots

1 cup sliced cucumbers

½ cup green onions, chopped

Sesame seeds, for garnish

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Prepare the Chicken: In a bowl, combine the cornstarch, garlic powder, paprika, salt, and pepper. Toss the chicken thighs in the mixture until evenly coated.

    Fry the Chicken: Heat vegetable oil in a large skillet over medium-high heat. Once the oil is hot, add the chicken thighs and fry for about 4-5 minutes on each side until golden brown and fully cooked (internal temperature should reach 165°F). Remove from the skillet and let rest.

      Make the Bang Bang Sauce: In a separate bowl, whisk together the mayo, sweet chili sauce, and sriracha until smooth. Taste and adjust spice levels if needed.

        Slice the Chicken: Once the chicken has rested, slice it into bite-sized pieces and toss with half of the Bang Bang sauce to coat.

          Assemble the Bowls: In serving bowls, place a generous serving of jasmine rice. Top with the sliced Bang Bang chicken, shredded carrots, and sliced cucumbers. Drizzle remaining Bang Bang sauce over the top.

            Garnish: Sprinkle chopped green onions, sesame seeds, and freshly chopped cilantro on top. Serve with lime wedges on the side for an added zest.
