Ingredients

1 lb boneless, skinless chicken thighs

1 cup cooked jasmine rice

1 cup broccoli florets

1 red bell pepper, sliced

1 avocado, sliced

4 green onions, sliced

½ cup mayonnaise

2 tbsp sweet chili sauce

1 tbsp sriracha (adjust to taste)

1 tbsp honey

1 tsp garlic powder

1 tsp ginger powder

Salt and pepper, to taste

Sesame seeds, for garnish

Fresh cilantro, for garnish

2 tbsp olive oil

Instructions

Prepare the Chicken: In a bowl, combine the garlic powder, ginger powder, salt, and pepper. Rub the seasoning onto the chicken thighs evenly.

Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the seasoned chicken thighs and cook for about 6-7 minutes on each side, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.

Blanch the Broccoli: While the chicken is cooking, bring a small pot of water to a boil. Add the broccoli florets and blanch for about 2-3 minutes until bright green and tender-crisp. Drain and set aside.

Make the Bang Bang Sauce: In a small bowl, mix together the mayonnaise, sweet chili sauce, sriracha, and honey until smooth. Adjust the heat level by adding more sriracha if desired.

Assemble the Bowl: In a large bowl, layer the cooked jasmine rice, sliced chicken, blanched broccoli, red bell pepper slices, and avocado.

Drizzle the Sauce: Generously drizzle the Bang Bang sauce over the top of the bowl.

Garnish: Top with sliced green onions, sesame seeds, and fresh cilantro for added flavor and color.

Serve: Serve immediately and enjoy your homemade Bang Bang Chicken Bowl!
