1 lb boneless, skinless chicken thighs

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

2 eggs, beaten

1 cup panko breadcrumbs

1 cup cooked jasmine rice

1 cup shredded lettuce

1 cup shredded carrots

½ cup diced cucumber

¼ cup green onions, sliced

½ cup fresh cilantro, chopped

½ cup mayonnaise

¼ cup sweet chili sauce

1 tablespoon Sriracha (adjust to taste)

Lime wedges for garnish

Prepare the Chicken: Start by cutting the chicken thighs into bite-sized pieces. Season with salt and pepper.

    Breading Station: Set up a breading station by placing flour, beaten eggs, and panko breadcrumbs in separate shallow dishes. Mix garlic powder, onion powder, paprika, salt, and pepper into the flour.
