Baked Feta Pasta

Ingredients
  

1 block (200g) feta cheese

2 cups cherry tomatoes

3 tablespoons olive oil

4 cloves garlic, minced

½ teaspoon red pepper flakes (adjust to taste)

Salt and pepper, to taste

12 ounces pasta (fusilli, penne, or your choice)

¼ cup fresh basil, chopped

Zest and juice of 1 lemon

Grated Parmesan cheese, for serving (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a baking dish, combine the cherry tomatoes, feta cheese, olive oil, minced garlic, red pepper flakes, salt, and pepper. Toss together until the tomatoes are well coated.

      Bake in the preheated oven for about 25-30 minutes, or until the tomatoes have burst and the feta has softened.

        While the feta and tomatoes are baking, cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water and drain the rest.

          Once the feta and tomatoes are done baking, remove the dish from the oven. Use a fork to gently mash the feta and mix it with the tomatoes to create a creamy sauce.

            Add the cooked pasta to the baking dish, along with lemon juice, lemon zest, and half of the fresh basil. Stir everything together until the pasta is well coated. If the mixture is too thick, add some reserved pasta water until you reach your desired consistency.

              Taste and adjust seasoning with more salt, pepper, or red pepper flakes if needed.

                Serve warm, garnished with the remaining fresh basil and a sprinkle of grated Parmesan cheese, if desired.
