For the Dumplings:

1 cup all-purpose flour

1/3 cup boiling water

1/2 teaspoon salt

200g ground pork (or chicken)

2 green onions, finely chopped

1 tablespoon soy sauce

1 teaspoon sesame oil

1 teaspoon ginger, grated

1/2 teaspoon garlic, minced

1/4 teaspoon red pepper flakes (or more for extra heat)

For the Soup:

4 cups chicken broth

1 tablespoon soy sauce

1 tablespoon chili paste (adjust to taste)

1 teaspoon sesame oil

1 cup bok choy, chopped

2 garlic cloves, minced

1 teaspoon ginger, minced

1 tablespoon vegetable oil

Salt and pepper to taste

Fresh cilantro for garnish

Optional: sliced chili peppers for garnish

Make the Dumpling Dough: In a medium bowl, combine flour and salt. Gradually pour in boiling water while stirring with a fork until the mixture forms a dough. Knead for about 5 minutes until smooth. Cover with a damp towel and set aside.

    Prepare the Dumpling Filling: In a separate bowl, mix ground pork, green onions, soy sauce, sesame oil, ginger, garlic, and red pepper flakes together. Stir until combined and set aside.

      Form the Dumplings: Divide the dough into small balls (about the size of a golf ball). Roll each ball into a thin circle (approximately 3 inches in diameter). Place a spoonful of the filling in the center of each circle. Fold the dough over and pinch the edges to seal them tightly.

        Make the Soup Base: In a large pot, heat vegetable oil over medium heat. Add minced garlic and ginger, and sauté for 1-2 minutes until fragrant.

          Add the Liquid: Pour in chicken broth, soy sauce, and chili paste. Bring to a boil, then reduce heat to a simmer. Season with salt and pepper to taste.

            Cook the Dumplings: Carefully add the dumplings to the simmering soup. Cook for 6-8 minutes (or until dumplings float to the top and are cooked through).

              Add Vegetables: Stir in the chopped bok choy. Let it simmer for an additional 2-3 minutes until the bok choy is tender.
