Asado is more than just a cooking method; it represents a cultural tradition deeply rooted in Argentine history. The term "asado" refers to a style of barbecue where various cuts of meat, particularly beef, are grilled over an open flame or in a specialized grill called a "parrilla." However, chicken has also made its way into this traditional style, leading to the beloved dish known as Asado Chicken.

Asado Chicken and Sauteed Lemon Zucchini

Ingredients
  

For the Asado Chicken:

4 chicken thighs (bone-in, skin-on)

2 tablespoons olive oil

4 cloves garlic, minced

1 tablespoon smoked paprika

1 teaspoon ground cumin

1 teaspoon dried oregano

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons apple cider vinegar

Juice of 1 lime

Fresh cilantro for garnish

For the Sautéed Lemon Zucchini:

2 medium zucchinis, sliced into half-moons

1 tablespoon olive oil

2 cloves garlic, minced

Zest of 1 lemon

Juice of ½ lemon

Salt and pepper to taste

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Chicken:

    - In a large mixing bowl, whisk together olive oil, minced garlic, smoked paprika, ground cumin, dried oregano, salt, black pepper, apple cider vinegar, and lime juice.

      - Add the chicken thighs to the bowl and coat them thoroughly with the marinade. Cover and refrigerate for at least 1 hour or overnight for best flavor.

        Cook the Asado Chicken:

          - Preheat your grill or oven to 400°F (200°C).

            - If using a grill, place the marinated chicken thighs skin-side down and grill for about 7-8 minutes per side, or until the internal temperature reaches 165°F (74°C).

              - If using the oven, place the chicken on a baking sheet and bake for approximately 35-40 minutes, basting with leftover marinade halfway through.

                Sauté the Zucchini:

                  - While the chicken is cooking, heat olive oil in a large skillet over medium heat.

                    - Add minced garlic and sauté for about 30 seconds until fragrant.

                      - Add the sliced zucchini to the skillet and sauté for about 5-7 minutes, or until they are tender but still crisp.

                        - Stir in lemon zest, lemon juice, salt, and pepper. Cook for an additional minute, then remove from heat.

                          Serve:

                            - Once the chicken is cooked, let it rest for a few minutes. Serve the chicken thighs garnished with fresh cilantro.

                              - Plate the sautéed lemon zucchini on the side, garnished with chopped parsley.
