2 medium apples (such as Granny Smith or Honeycrisp), peeled and diced

1 cup all-purpose flour

1/2 cup granulated sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1 large egg

1/2 cup milk

1 teaspoon vanilla extract

1/4 cup diced walnuts (optional)

Prepare the apples: In a medium bowl, toss the diced apples with 1 tablespoon of sugar and set aside for about 10 minutes to draw out some moisture.

    Mix dry ingredients: In another bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt until well combined.

      Combine wet ingredients: In a separate bowl, beat the egg and add the milk and vanilla extract. Whisk until fully combined.
