200g udon noodles

2 tablespoons chili oil

2 cloves garlic, minced

1 tablespoon soy sauce

1 tablespoon sesame oil

1 teaspoon sugar

1 green onion, chopped (for garnish)

1 teaspoon sesame seeds (for garnish)

Optional: 1/2 cup mixed vegetables (such as bell peppers, bok choy, or carrots)

Instructions
 

Cook the Udon Noodles: Bring a pot of water to a boil. Add the udon noodles and cook according to the package instructions (usually 2-3 minutes for fresh udon). If you’re using dried udon, it may take longer. Drain and rinse under cold water to stop the cooking process.

    Prepare the Sauce: In a small bowl, mix together the chili oil, minced garlic, soy sauce, sesame oil, and sugar until well combined. Adjust the chili oil according to your spice preference.
